The biggest mistake that most folks make in the kitchen is that they over cook everything.
From the mashed potatoes to the meatloaf.
The one exception is that you can make a tunafish casserole in the oven and forget about it for hours, and it won't make a difference.
Personally, I like my casseroles a little on the dry side. They tend to hold up better that way when you pour some white gravy over it.
