Joseph Smith described the latter day red horse as the churches of the world who will come to the rescue of the white horse, a.k.a. God's only true church in the world that is based in Salt Lake City, Utah.
At that time, he could not have possibly known that most of today's Catholic Hispanics are much more religious and conservative that today's white Episcopalians, etc.
